EASY BREAKFAST EGG CASSEROLE

 
Small fry pan
Medium bowl for egg mixture
Large casserole dish or 2 smaller dishes
Non-stick cooking spray
Aluminum Foil to cover casserole dish(es)
 
1 lb. sausage, bacon or ham
1 medium onion, chopped
1 can mushrooms & pieces
1/2 can pitted black olives, chopped
12 eggs
2 cups milk
6-8 slices of bread
1 cup  cheddar cheese or your favorite cheese
1/2 teaspoon salt (or to taste)
1/8 teaspoon pepper

Chop medium onion on a chopping board and then put in fry pan with sausage. Cook sausage and onions in fry pan with medium heat until sausage is browned, about 10 minutes.
While sausage and onions are cooking....
 
Open can of mushrooms and drain. 
Open can of pitted olives, drain. Chop 1/2 of the contents and store the remaining. (or use it all !!)
Spray casserole dish lightly with cooking spray. Place bread in casserole dish,
 
Break eggs into medum bowl, remove any broken shells. Add milk, salt and pepper. Mix eggs, milk, salt and pepper together with a fork.
 
When sausage and onions are finished, drain grease off.
 
 Put cooked sausage, bacon or ham with onions on top of the bread in the casserole dish.
Add cheese, olives, and mushrooms on top.
 
Pour egg/milk mixture over the top of the bread/cheese in the casserole dish.
 
Let stand 10-15 minutes to allow mixture to absorb into the bread. (you may put in the refrigerator and wait till the next morning to cook)
 
preheat oven to 350 degrees.
Cover casserole dish with aluminun foil. 
Place casserole dish in oven. Place cookie sheet in the next rake below casserole dish in case of overflow. Bake at 350 degree until brown (usually 35-45 minutes).
 
Remove from oven. Turn off the oven. Serve Hot.
 
Divide into 6 Large Portions.
